Steamed broccoli with parmesean cheese and grated pizza seasoning. If you can find the pizza seasoning grinders at the store, I highly recommend getting one. If not, broccoli with parmy is still YUM.
Use only the very tops of the broccoli. (Chop up the rest and save it for stir fry or something. I also puree leftover veggies like this and "hide" them in other stuff like spaghetti sauce.)
3 Pounds Fresh Broccoli (1 large bunch) 2 TBSP Olive Oil 4 Cloves Garlic, slivered 1/2 Cup Chopped Scallions 1 Cup Chicken Broth 1/4 TSP Salt Coarse Black Pepper (to taste) Fresh Parmesan Cheese (to taste)
1. Chop off the very top of the broccoli (like 1/2 inch or so.) 2. Cook oil in 2-quart microwave dish at full power for 2 minutes. 3. Add garlic and cook another 3 minutes. Should be kind of golden and starting to get crisp. 4. Stir in broccoli scallions. Add broth. Cover and cook another 5 minutes. 5. Season with salt & pepper. Sprinkle with cheese just before serving.
Makes 4 side portions.
Note: If your microwave doesn't already rotate, you may need to turn the dish every minute or so while it cooks. If your microwave is lower wattage, you may need some additional cook time.
